A Lean Pumpkin Spice Cookie You Won’t Feel Guilty About [Recipes]

These grain-free, dairy-free pumpkin spice cookies are a great way to combat cravings and indulge, all while staying lean and healthy year-round. Bake these cookies in batches, then freeze to avoid going overboard. They’re ready to roll in a quick 30 minutes.
The cookies are a total crowd pleaser. Definitely take a batch to a party, birthday, or event as an easy-to-make, guilt-free dessert.
Ingredients — Lean Pumpkin Spice Cookies
*Makes 24 cookies
- 3 cups almond flour
- 1/2 cup coconut sugar
- 1/2 cup pumpkin puree
- 2 tsp pumpkin pie spice
- 1/3 cup coconut oil
- 1 egg
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1 tsp baking soda
Directions:
- (1) Preheat oven to 350 degrees. Mix all dry ingredients (almond flour, salt, baking soda, pumpkin pie spice blend) and set aside.
- (2) In a separate bowl, melt the coconut oil and mix with the eggs, coconut sugar, pureed pumpkin, and vanilla extract.
- (3) Combine wet and dry ingredients until thoroughly mixed.
- (4) Drop rounded teaspoons on a greased cookie sheet. Bake at 350 for 20 minutes or until cookies have spread out and are firm when you lightly touch them.
